Ingredients

2.5 lb russet potatoes, peeled and cut into 1-inch cubes

1/2 tsp salt (for boiling water), plus more to taste

4 tbsp butter

1/2 cup whole milk

Garlic Herb Seasoning:

1 tsp dried parsley

1/2 tsp dried oregano

1/2 tsp dried basil

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp salt

Freshly cracked black pepper, to taste

Instructions

  1. Rinse potatoes under cool water to remove excess starch.
  2. Add to a pot, cover with water by 1 inch, and season with 1/2 tsp salt. Bring to a boil, then cook until tender, 7–10 minutes.
  3. Drain in a colander and briefly rinse with hot water to remove excess moisture.
  4. In the empty pot, add butter, milk, and garlic-herb seasoning. Heat on low until butter melts and milk is hot.
  5. Return potatoes to the pot, turn off heat, and mash until mostly smooth.
  6. Whip briefly with a hand mixer until fluffy. Taste and adjust seasoning as needed. Serve hot.
