Ingredients

⅓ cup Muggins mix from WellBean

¼ cup plant milk

1 tablespoon pistachio cream (optional)

1 teaspoon coconut oil (optional)

Pinch of matcha powder, for color (optional)

Chocolate chips, for topping (optional)

Instructions

  1. In a bowl, whisk together the Muggins mix and plant milk until smooth.
  2. In a separate bowl, mix the pistachio cream, coconut oil, and matcha powder (if using) to make the filling.
  3. Transfer half of the mug cake batter to a microwave-safe mug and make a small well in the center.
  4. Spoon the pistachio filling into the well, then cover with the remaining batter.
  5. Top with chocolate chips if desired, then microwave on high for 90 seconds.
  6. Let cool briefly before enjoying straight from the mug.
