Ingredients

2 cups rolled oats

½ cup mixed nuts (cashews, almonds, walnuts), roughly chopped

¼ cup pumpkin seeds

2 tablespoons chia seeds

2 tablespoons flaxseeds

½ cup dried cranberries or raisins

1 teaspoon ground cinnamon

Pinch of salt

½ cup natural peanut butter or almond butter

½ cup honey or maple syrup

1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine oats, nuts, seeds, dried fruit, cinnamon, and salt.
  3. In a small saucepan over low heat, melt peanut butter and honey (or maple syrup) until smooth. Stir in vanilla extract.
  4. Pour wet mixture over dry ingredients and mix until evenly coated.
  5. Form 12 mounds on the baking sheet, flatten slightly with a spoon.
  6. Bake 12–15 minutes, until edges are golden. Cool completely on a wire rack.

Notes

  • Use certified gluten-free oats if needed.
  • Add chocolate chips, coconut flakes, or citrus zest for variation.
  • Bake longer for a crunchier texture.
  • For nut-free cookies, use sunflower seed butter and extra seeds.
