Ingredients

For the Banana Bars:

1 cup all-purpose flour

1/4 cup collagen (Vital Proteins or substitutes)

1/4 tsp salt

1 tsp baking powder

2 large ripe bananas, mashed

1.5 tbsp unsalted butter (melted)

2 tsp vanilla extract

1/2 cup plain nonfat Greek yogurt

3/4 tsp vanilla cream Sweetleaf liquid stevia

1/4 cup vanilla unsweetened almond milk

For the Frosting:

4 oz Greek yogurt cream cheese (or 1/3 fat cream cheese)

1 container (5.3 oz) Light and Fit Greek yogurt (banana cream flavor or vanilla)

3/4 tbsp Jello sugar-free cheesecake pudding mix

Instructions

  1. Preheat the oven to 300°F and spray a 9×9 inch brownie pan with cooking spray.
  2. In a medium-sized bowl, combine the dry ingredients: flour, collagen, salt, and baking powder. Mix to combine.
  3. In a separate large mixing bowl, mash the bananas. Add in the melted butter, vanilla extract, Greek yogurt, stevia, and almond milk. Mix until combined.
  4. Fold the dry ingredients into the wet ingredients until fully mixed. If the batter feels too dry, add a splash of almond milk.
  5. Pour the batter into the greased baking pan and spread evenly.
  6. Bake at 300°F for 25-30 minutes. Check for doneness with a toothpick; it should come out clean, though slightly moist due to the bananas. Don’t overcook!
  7. Let the bars cool completely (ideally for a few hours or overnight) before frosting.
  8. For the frosting, combine cream cheese, Greek yogurt, and pudding mix. Beat with a hand mixer until smooth and creamy.
  9. Once the bars are cooled, spread the frosting evenly on top. Cut into 9 pieces and store in the fridge.
