Instructions

  1. Prepare the skillet and vegetables: Preheat a large skillet or wok over medium heat. Add the vegetable oil to the pan and swirl to coat the surface. Then add the chopped ham, white onion, and red bell pepper. Sauté these ingredients until the vegetables are tender and the ham is slightly browned, which usually takes about 4–5 minutes.
  2. Cook the eggs: Push the ham and vegetable mixture to one side of the skillet. Pour the lightly beaten eggs into the cleared space. Using a spatula, scramble the eggs gently until cooked through but still moist. Once cooked, mix the eggs evenly with the ham and vegetables.
  3. Add rice, pineapple, and seasonings: Stir in the cooked rice and pineapple tidbits to the pan, combining them with the egg and ham mixture. Pour the soy sauce and sesame oil over the top. Stir thoroughly to distribute the seasonings and fry the mixture, allowing the rice to heat through and flavors to meld, approximately 3–4 minutes. If using, sprinkle chopped green onions over the top just before serving.
