Hasselback Potatoes are a stunning side dish featuring thin, fan-like slices that crisp up around the edges while staying tender in the middle. Seasoned with garlic butter, fresh sage, and a touch of red pepper flakes, these potatoes are the perfect balance of crispy, tender, and flavorful.

Ingredients

6 medium Yukon Gold potatoes

Extra-virgin olive oil

Sea salt and freshly ground black pepper

Fresh sage leaves

1 recipe Garlic Butter (melted)

Fresh parsley, for serving

Red pepper flakes, for serving

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place a potato on a cutting board. Lay butter knives or chopsticks along both long sides to prevent the knife from cutting all the way through. Slice the potato crosswise into ⅛-inch thick slices, stopping when the knife touches the butter knives/chopsticks, keeping the potato intact at the bottom. Repeat with the remaining potatoes.
  3. Place the potatoes on the prepared baking sheet. Drizzle with olive oil and sprinkle with sea salt and black pepper. Rub the oil and seasoning into the cracks between the slices. Insert a fresh sage leaf into each crack.
  4. Drizzle with more olive oil and roast for 50 minutes.
  5. After 50 minutes, remove from the oven and brush the potatoes with the melted garlic butter. Return to the oven and roast for another 25 minutes, until tender and crispy around the edges.
  6. Season with salt and pepper to taste, then garnish with fresh parsley and red pepper flakes. Serve with extra garlic butter on the side for dipping!

Notes

  • For a cheesy twist, top with shredded cheese (like Parmesan or cheddar) during the last 10 minutes of roasting.
  • Add thyme or rosemary along with the sage for extra flavor.
  • For more heat, use chili powder or smoked paprika instead of red pepper flakes.
  • For a vegan option, use plant-based butter for the garlic butter.
