Ingredients

2 eggs, lightly beaten

1/2 cup (113 g) unsalted butter, melted

3/4 cup (180 ml) milk

1 tbsp granulated sugar

2 cups (250 g) all-purpose flour

2 tsp baking powder

1/2 tsp salt

1 cup (100 g) chopped cooked ham

1 cup (100 g) shredded cheddar cheese

1/4 cup (15 g) finely chopped scallions

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 12-cup muffin tin with butter or line it with cupcake liners.
  2. In a large bowl, combine the eggs, melted butter, milk, and granulated sugar. Whisk until well combined.
  3. Sift in the all-purpose flour, baking powder, and salt. Whisk again until the mixture is smooth.
  4. Add the chopped ham, shredded cheddar cheese, and finely chopped scallions. Stir with a spatula until everything is well mixed.
  5. Scoop the batter into the muffin tin, filling each cup to the top.
  6. Bake for 22-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool for 5 minutes in the pan, then transfer them to a wire rack to continue cooling.
