Ingredients

Teriyaki Sauce

  • 1/2 cup low sodium soy sauce
  • 1/4 cup water
  • 1 tablespoon brown sugar
  • 1 teaspoon rice vinegar
  • 1/2 tablespoon garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for slurry)

Protein & Vegetables

  • 1 pound ground turkey meat (80/20 preferred)
  • 1 medium carrot, julienned
  • 2 cups broccoli florets, cut into bite-size pieces
  • 1 teaspoon minced garlic
  • 1 teaspoon thinly sliced ginger
  • 1 stalk green onions, sliced
  • Toasted sesame seeds (optional garnish)
  • Cooking oil for sautéing
  • Cooked rice, to serve

Instructions

  1. Cook the rice: Prepare rice according to your preferred method and set aside warm.
  2. Make the teriyaki sauce: In a small bowl, mix cornstarch with 2 tablespoons water to form a slurry. In a small saucepan, combine soy sauce, 1/4 cup water, brown sugar, rice vinegar, and 1/2 tablespoon minced garlic. Heat over medium until it begins to simmer.
  3. Thicken the sauce: Slowly pour the cornstarch slurry into the simmering soy sauce mixture, stirring continuously until the sauce thickens, about 30 seconds. Remove from heat and set aside.
  4. Steam broccoli: Steam broccoli florets for 2 to 3 minutes until bright green and slightly tender. Remove and set aside.
  5. Sauté aromatics: Heat a large pan or wok over medium-high heat and add a small amount of cooking oil. Once hot, add minced garlic and sliced ginger. Sauté for about 15 seconds until fragrant.
  6. Cook the ground turkey: Add ground turkey to the pan and cook, stirring frequently, for about 5 minutes until it is nearly cooked through.
  7. Add teriyaki sauce: Pour the prepared teriyaki sauce into the turkey. Stir well to combine and cook for an additional 2 to 3 minutes until the turkey is fully cooked and glazed.
  8. Add carrots: Incorporate the julienned carrots into the pan and stir well. Cook for about 1 minute to slightly soften the carrots while maintaining crunch.
  9. Combine broccoli: Add the steamed broccoli to the stir fry and mix thoroughly for about 30 seconds to blend flavors and heat through. Turn off heat.
  10. Garnish and serve: Sprinkle sliced green onions and optional toasted sesame seeds over the dish. Serve the turkey teriyaki mixture over freshly cooked rice for a complete meal.

Notes

  • You can substitute ground chicken or beef for turkey if preferred.
  • Adjust the brown sugar quantity to make the sauce sweeter or less sweet according to taste.
  • Steaming broccoli just until tender keeps its bright color and slight crunch, enhancing texture.
  • Add a splash of sesame oil in the last step for additional flavor if desired.
  • Leftover teriyaki sauce can be stored in the refrigerator for up to 3 days.
