Ingredients

1 pound ground beef

1 medium white onion, diced

1 packet taco seasoning

1/2 cup water

8 soft taco-size tortillas (flour or corn)

2 cups enchilada sauce (red or green)

3 cups marbled cheddar cheese, shredded

Optional toppings: sour cream, pico de gallo, diced avocado, diced green onions

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook ground beef and onion until beef is no longer pink. Drain excess fat.
  3. Add taco seasoning and water. Stir until combined and liquid is absorbed. Remove from heat.
  4. Spread 1/2 cup enchilada sauce over the bottom of a 9×13-inch casserole dish.
  5. Place 1/3 cup beef mixture and 1/4 cup cheese down the center of each tortilla. Roll tightly and place seam-side down in the dish. Repeat with remaining tortillas.
  6. Sprinkle any leftover beef mixture over the top. Pour remaining enchilada sauce over tortillas and spread to cover. Sprinkle remaining cheese on top.
  7. Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.
  8. Remove from oven, garnish with desired toppings, and serve hot.

Notes

  • Swap beef with chicken, turkey, or beans for a vegetarian option.
  • Use green enchilada sauce for a tangy twist.
  • Add corn, peppers, or black beans for more flavor and texture.
  • Mix cheeses like Monterey Jack or Mexican blend for variety.
  • Freeze before baking for a convenient make-ahead meal.
