Ingredients

1 lb lean ground beef

8 flour or corn tortillas

2 cups enchilada sauce (store-bought or homemade)

1 cup shredded cheddar or Monterey Jack cheese

1 medium onion, diced

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

Sour cream (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with the diced onions for 5-7 minutes until the beef is cooked through and the onions are translucent.
  3. Add the minced garlic, cumin, and chili powder to the beef mixture and sauté for another minute.
  4. Spoon the beef mixture evenly onto each tortilla, roll them tightly, and place seam-side down in a greased baking dish.
  5. Pour the enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  6. Bake uncovered for 20-25 minutes, or until the cheese is bubbly and golden brown.
  7. Serve with a dollop of sour cream on top, if desired.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat at 350°F (175°C) for 10-15 minutes.
  • For a spicier version, add diced jalapeños or use a hotter enchilada sauce.
  • If you’re short on time, substitute store-bought enchilada sauce for homemade sauce.
  • To make vegetarian enchiladas, replace the ground beef with black beans, tofu, or vegetables.
