Ingredients

1 cup green olives, pitted and drained

1/2 cup feta cheese, crumbled

4 ounces cream cheese, softened

1 clove garlic

1 tablespoon lemon juice

2 tablespoons olive oil

Fresh herbs (parsley or dill), optional for garnish

Instructions

  1. Drain green olives and remove pits if necessary. Roughly chop to help blending.
  2. In a food processor, combine olives, feta, cream cheese, and garlic. Blend until mostly smooth.
  3. Add lemon juice and olive oil. Blend again until creamy and fully combined.
  4. Taste and adjust with more lemon juice or freshly cracked pepper if desired.
  5. Optional: stir in or garnish with chopped fresh herbs.
  6. Serve immediately, or refrigerate for 30 minutes to let flavors develop.
