  • 2 tablespoons greens powder, plus more for optional dusting
  • 1 teaspoon ginger powder
  • 2 tablespoons lemon juice
  • Zest of one lemon

Instructions

  1. Make the base dough: In a food processor, blend the dates, coconut butter/manna, lemon juice and lemon zest, and coconut oil until a sticky dough forms. Adjust the amount of coconut oil as needed depending on the consistency of your manna to achieve a pliable dough.
  2. Add dry ingredients: Add hemp seeds, grass-fed collagen powder, ginger powder, greens powder, and half of the shredded coconut to the food processor. Give it a short pulse to incorporate the ingredients evenly.
  3. Combine with remaining coconut: Transfer the mixture to a large bowl, then fold in the rest of the shredded coconut by hand. The mixture should be sticky but firm enough to shape; if not, refrigerate for 30 minutes to help it firm up.
  4. Form the energy balls: Roll the mixture into small balls approximately 1 tablespoon each. Optionally, roll the balls in extra shredded coconut or dust with additional greens powder for coating.
  5. Chill and store: Place the balls in the fridge or freezer to firm up. Store in an airtight container in the fridge or freezer. Serve two balls per serving as a quick, energizing snack.
