Ingredients

½ dozen green beans

1 can tuna in water (drained)

1 small can corn

300 g cherry tomatoes

2 spring onions

Croutons

About 15 black olives

3 Tbsp olive oil

1 ½ Tbsp balsamic vinegar

Salt and pepper, to taste

Instructions

  1. Rinse and trim the green beans. Steam for 5–7 minutes until tender-crisp and bright green, then shock in cold water.
  2. Drain and flake the tuna with a fork.
  3. Drain and rinse the corn, ensuring it is dry.
  4. Slice cherry tomatoes in half and thinly slice spring onions.
  5. In a salad bowl, combine green beans, tuna, corn, tomatoes, onions, croutons, and olives.
  6. Whisk olive oil, balsamic vinegar, salt, and pepper together to make the dressing.
  7. Pour dressing over the salad, toss gently, and serve immediately.
