Ingredients

1 1/3 cups vanilla Greek yogurt (3.5% fat or preferred flavor)

1 1/2 (3.5-ounce) 70% dark chocolate bars, broken into pieces

1 tablespoon coconut oil

1/4 cup roasted & lightly salted pistachios, shelled and chopped

Popsicle sticks (optional)

Instructions

  1. Line a large baking sheet with parchment paper.
  2. Using a 1/3 cup scoop, portion Greek yogurt onto the parchment, shaping into 4 rounded bars.
  3. Insert popsicle sticks into each bar. Freeze for 2–3 hours or until solid.
  4. In a microwave-safe bowl, melt chocolate and coconut oil in 1-minute intervals, stirring until smooth.
  5. Place chopped pistachios on a plate.
  6. Working quickly, coat one side of each frozen yogurt bar with melted chocolate, letting excess drip off. Immediately sprinkle pistachios on top.
  7. Repeat on the other side and with remaining bars.
  8. Return bars to freezer to set if needed. Serve straight from the freezer.
