Ingredients

Granola Cups

  • 1 ½ cups rolled oats
  • ½ cup peanut butter (runny consistency)
  • ⅓ cup maple syrup
  • ½ tsp vanilla extract (optional but recommended)
  • ½ tsp cinnamon (optional but recommended)
  • pinch salt (optional but recommended)

Topping

  • yogurt (for topping)
  • fresh fruit (for topping)
  • chia seeds (for topping)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350ºF (175ºC) and grease 6 cavities of a muffin pan generously with coconut oil to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the rolled oats, runny peanut butter, maple syrup, vanilla extract, cinnamon, and a pinch of salt. Mix thoroughly until all ingredients are evenly incorporated to form the granola base.
  3. Form Cups: Evenly divide the granola mixture into the 6 greased muffin pan cavities. Using your fingers or the back of a tablespoon, press down gently to create a well or cup shape in the center of each portion.
  4. Bake: Bake the granola cups in the preheated oven for 12 to 15 minutes, or until the edges begin to turn a golden brown color, indicating they are toasted and crisp.
  5. Cool and Remove: Allow the granola cups to cool in the muffin pan for 15 minutes to set, then carefully run a knife around the edges to loosen them and transfer the cups onto a wire rack to cool completely.
  6. Assemble: Once cooled, fill each granola cup with your favorite yogurt, then top with fresh fruit and sprinkle with chia seeds or other desired toppings for added flavor and nutrition.

Notes

  • Ensure the peanut butter is runny to help the granola mixture bind well; if needed, gently warm it to loosen.
  • You can customize toppings based on seasonality and preference, such as berries, banana slices, or nuts.
  • Store any leftover granola cups in an airtight container at room temperature for up to 3 days; assemble with yogurt just before serving to maintain crispness.
  • For a nut-free option, substitute peanut butter with sunflower seed butter.
  • If you prefer a sweeter granola, add a bit more maple syrup to taste.
