Ingredients

600g ribeye or scotch fillet

2 tbsp vegetable oil

1 large onion (sliced)

300g mushrooms (sliced)

40g butter

2 tbsp plain flour

500ml beef broth

1 tbsp Dijon mustard

150ml sour cream

Salt and pepper

Pasta or egg noodles (for serving)

Chives (optional, for garnish)

Instructions

  1. Flatten and slice the ribeye or scotch fillet into thin strips. Season the beef with salt and pepper.
  2. Heat the vegetable oil in a large pan over medium-high heat. Sear the beef in batches, cooking for about 30 seconds per side, until browned. Remove the beef from the pan and set it aside.
  3. In the same pan, melt the butter and add the sliced onions. Cook for about 1 minute, then add the mushrooms and cook until they turn golden.
  4. Stir in the plain flour and cook for 1 minute. Gradually add the beef broth, stirring constantly to avoid lumps. Stir in the Dijon mustard and let the sauce simmer to thicken.
  5. Remove the pan from heat and gently stir in the sour cream until smooth.
  6. Return the seared beef and its juices to the pan, simmering for 1 minute to heat through.
  7. Serve the beef stroganoff hot over pasta or egg noodles. Garnish with chives if desired.

  • Leftover beef stroganoff can be stored in an airtight container in the refrigerator for up to 3 days.
  • For variations, you can substitute the beef with chicken or pork, and use different mushrooms like cremini or shiitake.
  • If you don’t have Dijon mustard, you can use yellow mustard or horseradish as substitutes.
