Ingredients

  • 1 lime, juiced

Instructions

  1. Prepare the Golden Rice: Rinse the rice thoroughly under cold water according to package instructions. In a pot, combine the rinsed rice with water as per package measurements. Stir in turmeric, yellow curry powder, salt, and sugar. Cover with a lid and cook on the stovetop for about 20 minutes or until rice is tender and liquid is absorbed.
  2. Sauté Aromatics: While the rice cooks, heat olive oil in a large skillet over medium heat. Add diced yellow onion and sauté for about 3 minutes until translucent. Add minced garlic and ginger, cooking for another 2 minutes until fragrant. Remove half of this mixture and set aside in a small bowl for later use.
  3. Cook Ground Beef Mixture: In the same skillet, add diced carrots and ground beef. Stir in tomato paste, chili powder, salt, black pepper, and garam masala. Cook, stirring frequently, until the beef is browned and cooked through and carrots have softened.

  5. Finish the Golden Rice: Once the rice is done, fluff it with a fork and fold in the reserved sautéed onion mixture and golden raisins to incorporate them evenly.
