Instructions

  1. Sauté: Heat the olive oil in a deep soup pot over medium heat. Add the chopped onion, garlic, cauliflower chunks, cashews, and turmeric. Sauté the mixture for about 10 minutes until everything is very fragrant and starting to soften.
  2. Simmer: Pour in 4 cups of water and add 2 teaspoons of salt. Bring the mixture to a gentle simmer and cook until the cauliflower and cashews are fully softened, which usually takes around 10-15 minutes.
  3. Blend: Carefully transfer the soup in batches to a blender. Blend until the mixture achieves a creamy, smooth consistency. Be cautious when blending hot liquids to avoid spills.
  4. Finish: Return the blended soup to the pot. Add the remaining 2-3 cups of water as needed to adjust the soup’s thickness. Taste and adjust seasoning with additional salt and a squeeze of lemon juice. Optionally, garnish with spiced chickpeas, parsley, and a drizzle of olive oil before serving. Enjoy warm and cozy.
