Ingredients

Peppers

  • 1 pound mini sweet bell peppers (approximately 12 peppers)

Filling

  • 10 ounces goat cheese

Toppings

  • Balsamic glaze, to drizzle
  • Honey, to drizzle
  • 2 Tbsp fresh thyme (or dried thyme)
  • Black pepper, to taste

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to prepare for roasting the stuffed peppers.
  2. Prepare the Peppers: Wash and dry the mini sweet bell peppers thoroughly. Cut each pepper in half lengthwise and carefully remove the seeds and any white membranes to create space for filling.
  3. Stuff with Goat Cheese: Using a spoon, fill each pepper half with goat cheese. You can use as much or as little as you prefer—stuff them to the brim for a richer bite, or use a modest scoop for a lighter appetizer.
  4. Arrange and Roast: Place the stuffed peppers in a single layer on a baking dish or sheet to ensure even roasting. Bake in the preheated oven for 20-25 minutes until the peppers become soft and lightly browned or charred around the edges.
  5. Finish and Serve: Remove the peppers from the oven and transfer them to a serving platter. Drizzle balsamic glaze and honey over the warm peppers. Sprinkle with fresh thyme and freshly ground black pepper to enhance the flavors. Serve warm and enjoy!

Notes

  • You can substitute fresh thyme with dried thyme if preferred, but fresh thyme gives a brighter flavor and prettier presentation.
  • The amount of goat cheese is flexible; if you want a lighter appetizer, feel free to reduce it.
  • Balsamic glaze can be homemade or store-bought depending on convenience.
  • These peppers are best served warm but can also be enjoyed at room temperature.
  • For added texture, consider sprinkling some toasted nuts or seeds on top before serving.
