Ingredients

Dry Ingredients

  • 1½ cup almond flour
  • 1¼ tsp baking powder
  • ¼ cup white granulated sugar

Wet Ingredients

  • 1 Tbsp avocado oil
  • 1 large egg

Fruit and Extras

  • 2 cups strawberries, cut into fourths
  • 2 Tbsp strawberry jam (optional)

Instructions

  1. Preheat and mix dry ingredients. Preheat your oven to 375ºF. In a large bowl, whisk together the almond flour, baking powder, and white granulated sugar thoroughly to combine the dry ingredients.
  2. Add wet ingredients and combine. Pour the melted avocado oil into the dry mixture and mix well. Then, add the egg and lightly fold everything together until just combined; the batter should be moist but not overly thick.
  3. Prepare the pan and add strawberries. Pour the batter evenly into a small 8-inch skillet or similar-sized baking dish, spreading it out to cover the bottom evenly. Arrange the quartered strawberries evenly on top of the batter.
  4. Add jam and bake. Dot small blobs of strawberry jam across the top of the cobbler to add extra sweetness and flavor. Place the cobbler on the center rack of the oven and bake for about 25 minutes, or until the crust is browned and crisp on the edges.
  5. Cool and serve. Remove the cobbler from the oven and let it cool for about 10 minutes before serving, allowing it to set and ensuring the crust achieves the perfect crunch.

Notes

  • You can use fresh or frozen strawberries, but fresh strawberries provide the best texture and flavor.
  • If avocado oil is not available, melted coconut oil or another neutral oil can be substituted.
  • For a sweeter touch, add the optional strawberry jam, or adjust the sugar amount to taste.
  • Ensure the skillet or baking dish is oven-safe.
