Ingredients

2 tablespoons butter

1 tablespoon cornstarch (1½ tablespoons for thicker sauce)

¼ teaspoon salt

⅛ teaspoon pepper

1 cup milk (1% or higher)

8 slices gluten free white bread (or any gluten free sandwich bread)

Butter for both sides of the bread

4 slices ham

Dijon mustard

Sliced Swiss cheese (Gruyère or Emmenthal)

½ cup grated Swiss or Parmesan cheese

Instructions

  1. In a small saucepan, melt butter over medium heat. Whisk in cornstarch, salt, and pepper until smooth.
  2. Gradually add the milk in thirds, stirring and allowing each addition to thicken before adding the next. Cook until the sauce is smooth and thickened. Remove from heat.
  3. Lay out 8 slices of gluten free bread. Butter the outside of each slice. Spread Dijon mustard on the inside, then layer with ham and sliced Swiss cheese. Close to form 4 sandwiches.
  4. Heat a griddle or non-stick pan over medium heat. Grill sandwiches until golden brown on both sides and cheese is melted inside.
  5. Preheat broiler. Place grilled sandwiches on a lined baking sheet. Spread white sauce on top and sprinkle with grated cheese.
  6. Broil sandwiches until the top is golden and bubbly. Serve immediately.

Notes

  • Use turkey or roast chicken as an alternative to ham.
  • For a vegetarian version, skip the ham and add sautéed mushrooms or spinach.
  • Swap in cheddar or cheese blends for different flavor profiles.
  • Dairy-free versions can be made with plant-based milk, butter, and cheese.
  • Best enjoyed fresh but can be reheated in a toaster oven or under the broiler.
