Ingredients

1 ¾ cups flour

1 cup old-fashioned oats

¼ teaspoon salt

1 ½ teaspoons cinnamon

1 ½ teaspoons baking powder

1 cup sugar

¾ cup vegetable oil

2 eggs, beaten

½ cup plain nonfat Greek yogurt

1 cup applesauce

1 teaspoon vanilla extract

⅔ cup powdered sugar (for glaze)

¼ cup applesauce (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8 ½ x 4 ½ inch loaf pans.
  2. In a large bowl, mix together flour, oats, salt, cinnamon, and baking powder. Set aside.
  3. In another bowl, whisk together sugar, vegetable oil, eggs, Greek yogurt, applesauce, and vanilla extract until fully combined.
  4. Gently fold the dry ingredients into the wet ingredients, stirring just until combined. Be careful not to overmix.
  5. Divide the batter evenly between the two loaf pans.
  6. Bake for 41-45 minutes, or until a toothpick inserted into the center comes out mostly clean but slightly moist.
