Ingredients

Rim Ingredients

  • 2 tablespoons sugar
  • 2 tablespoons water
  • 2 tablespoons crushed gingerbread cookies (or colored sugar)

Frozen Gingerbread Cocktail

  • 1/2 cup gingerbread men cookies (or gingersnap cookies)
  • 1 1/2 cups vanilla bean ice cream
  • 1/2 cup eggnog
  • 3 ounces spiced rum (6 tablespoons)

Garnishes

  • 1/2 cup whipped cream
  • 2 gingerbread men cookies
  • 2 cinnamon sticks

Instructions

  1. Make Simple Syrup: In a small saucepan over medium heat, combine the sugar and water. Bring to a boil while stirring to dissolve the sugar completely. Remove from heat and allow the syrup to cool to room temperature.
  2. Prepare Glass Rims: Dip the rims of two glasses into the cooled simple syrup, then immediately dip them into the crushed gingerbread cookies, coating the edges evenly. Set aside.
  3. Pulse Cookies: Place the gingerbread men cookies or gingersnap cookies into a blender and pulse a few times to break them into smaller pieces, helping the texture blend smoothly.
  4. Blend Cocktail: Add the vanilla bean ice cream, eggnog, spiced rum, and the broken cookies to the blender. Blend all ingredients together until smooth and fully combined, creating a creamy frozen cocktail mixture.
  5. Serve: Pour the blended frozen cocktail into the prepared rimmed glasses. Top each drink with a generous dollop of whipped cream, and garnish with a gingerbread man cookie and a cinnamon stick for a festive touch.
  6. Enjoy Immediately: Serve the cocktail right away to enjoy the perfect cold, creamy texture and rich holiday flavors.

Notes

  • You can substitute gingersnap cookies if gingerbread cookies are unavailable for a similar flavor.
  • Adjust the amount of spiced rum to taste for a lighter or stronger cocktail.
  • For a non-alcoholic version, omit the spiced rum and add a splash of vanilla extract or extra eggnog.
  • Make sure the simple syrup is completely cooled before dipping the glasses to ensure proper adhesion of cookie crumbs.
  • The cocktail is best served immediately to maintain its frozen consistency and flavor.
