Instructions

  1. Simmer Ginger: Heat the water and sliced ginger in a small pot over high heat until the water begins to boil. Then partially cover the pot and reduce the heat to maintain a gentle simmer. Let it simmer for 15 minutes to infuse the water with ginger flavor.
  2. Strain Ginger Water: After simmering, strain the ginger slices out of the water. Keep the slices if you want to reuse them for another batch.
  3. Prepare Lemon Juice: While the ginger water simmers, cut and juice the lemons to get fresh lemon juice.
  4. Mix Tea: Combine the warm ginger water, honey, and fresh lemon juice in a suitable container. Stir well to dissolve the honey completely. Taste and adjust by adding more lemon juice or honey if the balance of sweet and tangy needs tweaking.
  5. Serve: Divide the tea evenly into two cups. Serve hot or warm according to preference. Optionally, garnish each cup with a slice of lemon for an extra citrus touch.
