Ingredients

450 g flour

8 g salt

7 g instant yeast

15 g honey

75 g yogurt

45 ml sunflower oil

190 ml warm water

For the honey mixture:

50 g honey

100 ml water

For the sesame coating:

For the chicken mixture:

550 g chicken breast

4 g salt

4 g onion powder

3 g garlic powder

2 g cumin powder

2 g cayenne pepper

2 g paprika powder

25 ml olive oil

Instructions

  1. Prepare the dough: In a large bowl, combine flour, salt, instant yeast, honey, yogurt, sunflower oil, and warm water. Mix well and knead for 10-12 minutes until smooth and cohesive. Cover the dough and let it rise for 1 hour in a warm place, or until it has doubled in size.
  2. Marinate the chicken: While the dough rises, slice the chicken breast into thin strips. In a bowl, combine the chicken with salt, onion powder, garlic powder, cumin powder, cayenne pepper, paprika powder, and olive oil. Mix well and refrigerate to marinate.
  3. Shape the dough: Once the dough has risen, punch it down and divide it into 9 equal pieces (about 84 grams each). Roll each piece into a smooth ball.
  4. Form the braids: Roll one ball of dough into a long rope. Fold the rope in half, then twist the two strands to form a braid. Repeat for the remaining dough.
  5. Honey mixture: Mix the honey and water in a small bowl to create the honey mixture.
  6. Coat with sesame seeds: Spread sesame seeds on a plate. Dip each braided dough piece in the honey mixture, then roll it in sesame seeds to coat evenly.
  7. Let the dough rise: Place the coated dough on a baking sheet lined with parchment paper. Let the dough rise for another 30 minutes in a warm place.
  8. Bake the bread: Preheat the oven to 200°C (390°F). Bake for 12-18 minutes, or until golden brown. Keep an eye on the rolls to avoid overbaking.
  9. Cook the chicken: While the bread is baking, heat a pan over medium heat and cook the marinated chicken on both sides until fully cooked through.
  10. Assemble the rolls: Once the bread has cooled slightly, cut it open and fill it with the cooked chicken and any desired vegetables.
