Ingredients

2 tbsp unsalted butter or coconut oil

½ medium onion, finely diced

4 cloves garlic, minced

1 tsp turmeric powder

2 cups basmati rice (or long-grain rice of choice), rinsed and drained

3 cups chicken stock (or vegetable stock)

½ tsp salt (or to taste)

¼ tsp black pepper (or to taste)

Parsley for garnish (optional)

Marinated chicken kebabs, grilled vegetables, seafood, or meat to serve (optional)

Instructions

  1. In a pot, melt the butter (or coconut oil) over medium heat. Add the diced onion and minced garlic, sautéing for 1-2 minutes until fragrant.
  2. Stir in the turmeric powder and combine with the onion and garlic mixture.
  3. Add the rinsed and drained rice, stirring to coat the grains in turmeric and butter. Toast the rice for 2 minutes.
  4. Add the stock, salt, and pepper, then stir to combine.
  5. Bring to a boil, then cover the pot, reduce heat to low, and let simmer for 15 minutes.
  6. After 15 minutes, remove from heat and let sit covered for 5 minutes.
  7. Fluff the rice with a fork and garnish with parsley. Serve alongside your main dish and enjoy!
