Ingredients

1 red onion, roughly diced

1 red bell pepper, roughly diced

½ lb fresh broccoli, cut into small florets

1 yellow squash, cut into ½-inch slices

1 zucchini squash, cut into ½-inch slices

3 cloves garlic, minced

1 tbsp olive oil

1 tsp garlic powder

½ tsp salt

½ tsp black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Chop all the vegetables and place them in a large bowl.
  3. Drizzle olive oil over the vegetables, then sprinkle with garlic powder, minced garlic, salt, and pepper. Toss until the vegetables are evenly coated.
  4. Spread the seasoned vegetables in a single layer on a large baking sheet.
  5. Bake for 15–20 minutes, or until the vegetables are tender and slightly browned.
