Ingredients

Shrimp Marinade

  • 1 ½ pounds raw jumbo shrimp, thawed, peeled and deveined leaving tails on
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 3 cloves garlic, minced

Instructions

  1. Marinate the Shrimp: Place the shrimp in a medium bowl and add olive oil, lemon juice, salt, pepper, parsley, and minced garlic. Stir thoroughly to combine all ingredients. Let the shrimp marinate for 15-20 minutes to absorb the flavors.
  2. Prepare Skewers: Thread the marinated shrimp onto skewers, fitting 3-6 shrimp on each depending on the skewer size. Stainless steel skewers are recommended, but wooden ones can also be used (ensure to soak wooden skewers before grilling to prevent burning).
  3. Preheat the Grill: Heat the grill to medium-high heat. Clean the grill grates and lightly oil them to prevent the shrimp from sticking during grilling.
  4. Grill the Shrimp: Place skewered shrimp on the preheated grill. Cook for 2-3 minutes on each side, or until shrimp turn opaque with white and pink coloring, indicating they are fully cooked.
  5. Serve: Remove shrimp from the grill and serve warm, optionally with an extra drizzle of fresh lemon juice for added brightness.

Notes

  • For wooden skewers, soak them in water for at least 30 minutes before threading shrimp to avoid burning on the grill.
  • Do not overcook shrimp as they become tough and rubbery; shrimp cook very quickly, typically 4-6 minutes total on the grill.
  • Use fresh parsley and garlic for the best flavor impact in the marinade.
  • Serve with a side salad, grilled vegetables, or rice for a complete meal.
