Potatoes

Instructions

  1. Clean Potatoes: Scrub the baby potatoes thoroughly under cold running water to remove any dirt or debris. This ensures clean potatoes for boiling and baking.
  2. Boil Potatoes: Place the cleaned potatoes in a large pot, submerge them with water, and add salt to taste. Bring the water to a boil and cook the potatoes until they are fork-tender, about 20 to 30 minutes depending on the size of the potatoes. Drain the potatoes and set them aside to cool slightly.
  3. Preheat the Oven: Preheat your oven to 200°C (400°F), or 180°C (365°F) if using a fan oven, to get it ready for baking the potatoes.
  4. Smash Potatoes: Lightly grease a baking tray with oil or line it with baking paper. Arrange the boiled potatoes evenly on the tray. Using a potato masher or fork, gently press down on each potato to flatten it, making sure they hold together without being completely mashed.
  5. Prepare Garlic Butter Mixture: In a small bowl, combine melted butter, olive oil, garlic paste, chopped parsley, salt, and black pepper. Stir well to mix all the flavors. Drizzle this garlic butter mixture evenly over the smashed potatoes on the tray.
  6. Bake Potatoes: Place the tray in the preheated oven and bake the potatoes for 30 to 40 minutes, or until they are golden and crispy around the edges.
