Ingredients

1 lb (450g) Italian sausage, sliced into bite-sized pieces

2 tbsp unsalted butter

4 cloves garlic, minced

12 oz (340g) rigatoni or pasta of your choice

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the rigatoni (or pasta of your choice) according to the package instructions until al dente. Reserve ¼ cup of pasta water before draining and set aside.
  2. While the pasta cooks, heat a large skillet over medium heat. Add the sausage bites and cook until golden brown and cooked through, about 6-8 minutes. Remove the sausage from the skillet and set it aside.
  3. In the same skillet, add the butter and minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Reduce the heat to low and stir in the heavy cream. Bring to a gentle simmer, then add the freshly grated Parmesan cheese. Stir until the sauce is smooth and creamy. Season with salt and pepper to taste.
  5. Add the cooked pasta and sausage back into the skillet. Toss everything together until the pasta and sausage are well coated with the creamy sauce. If the sauce is too thick, add a splash of reserved pasta water to loosen it up.
  6. Sprinkle with fresh parsley and extra Parmesan cheese before serving. Enjoy!
