  • 2 Tbsp Gelatin (18-20g)

Instructions

  1. Prepare the fruit mixture: In a saucepan, combine frozen berries, pitted dates, vanilla essence, and water.
  2. Simmer the mixture: Cook the mixture over medium heat and simmer gently for 5 minutes to soften the berries and blend the flavors.
  3. Cool down: Remove the saucepan from heat and allow the mixture to cool for 5 minutes, preventing gelatin from dissolving prematurely.
  4. Blend to smooth texture: Use a stick blender or mixer to blitz the fruit mixture until completely smooth and evenly textured.
  5. Add gelatin: Sprinkle the gelatin over the blended mixture and use the stick blender again to mix thoroughly, ensuring there are no lumps of gelatin.
  6. Fill molds: Pour the gelatin-fruit mixture into silicone molds, using a small jug for easier pouring.
  7. Chill to set: Place the filled molds into the refrigerator and chill for about 1 hour, or until the gummies are solid and firm.
  8. Store: Carefully pop the gummies out of the molds and store them in an airtight container in the fridge for up to 5 days.
