Ingredients

Fruit

  • 1 cup strawberries, sliced
  • ½ cup blueberries

Sweetener

  • ¼ cup granulated sugar

Dairy

  • 1 cup full fat Greek yogurt

Topping

  • ½ cup granola

Instructions

  1. Prepare strawberries: Add the sliced strawberries and granulated sugar to a medium bowl and stir to combine. Cover the bowl and refrigerate for at least 30 minutes or overnight to allow the strawberries to macerate and release their natural juices.
  2. First strawberry layer: Divide half of the macerated strawberries evenly into two clear serving glasses as the first layer.
  3. First yogurt layer: Spoon half of the full fat Greek yogurt evenly on top of the strawberry layer in each glass.
  4. First blueberry layer: Add half of the fresh blueberries evenly on top of the yogurt layer.
  5. Granola layer: Sprinkle all of the granola evenly over the blueberry layer for added crunch and texture.
  6. Second strawberry layer: Add the remaining half of the macerated strawberries as the next layer in each glass.
  7. Second yogurt layer: Top the second strawberry layer with the remaining Greek yogurt.
  8. Second blueberry layer: Finish with the remaining blueberries as the topmost layer in each parfait glass.
  9. Serve: Serve immediately for the best consistency to prevent the granola from becoming soggy.

Notes

  • Refrigerate the strawberries for at least 30 minutes to enhance their flavor and sweetness.
  • For a healthier option, use low-fat or non-fat Greek yogurt.
  • Granola can be substituted with nuts or seeds for added texture.
  • These parfaits are best enjoyed fresh to maintain the crunchiness of the granola.
  • Can be prepared the night before, but add granola just before serving to keep it crisp.
