Fillo Bites

  • 375g Antoniou Fillo Pastry
  • 250g butter, melted
  • 320g feta cheese
  • 2 tablespoons chilli flakes
  • 3 tablespoons sesame seeds

Instructions

  1. Prepare Pastry and Equipment: Remove the filo pastry from the fridge and allow it to come to room temperature while still in its packaging. Preheat your oven to 180°C (fan forced). Generously brush two 12-hole muffin tins and one 6-hole muffin tin with melted butter to prevent sticking.
  2. Slice Feta Cheese: Cut the feta cheese into long strips approximately 1 to 1.5 cm thick. Set aside for assembly.
  3. Prepare Fillo Stacks: Lay the stack of filo pastry flat on your workspace. Cut it in half lengthwise to form two thinner stacks. Brush the top sheet of each stack with melted butter, then sprinkle evenly with chilli flakes and sesame seeds to infuse flavor into the layers.
  4. Assemble Rolls: Place the feta strips along the length of the buttered filo stacks about 1.5 cm from the edge. Fold the bottom edge of the pastry over the feta and roll tightly to form long logs, enclosing the cheese and seasoning inside.
  5. Slice and Arrange Bites: Using a sharp knife, slice each filled filo log into 15 pieces, creating small bite-sized rolls. Place each piece into a prepared muffin tin hole, arranging them snugly.
  6. Butter and Bake: Carefully drizzle about one tablespoon of melted butter over each filo bite to ensure a golden, flaky crust. Bake in the preheated oven for about 35 minutes, or until the pastry turns golden brown and crispy.
  7. Cool and Garnish: Remove the bites from the oven and let them rest for 5 minutes in the tins to set. Transfer to a serving platter, drizzle each bite generously with honey, and sprinkle black sesame seeds over the top for added texture and visual appeal.
