Instructions

  1. Preheat and Prepare Muffins: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Arrange the English muffin halves cut side up on the baking sheet and lightly drizzle with olive oil.
  2. Toast Muffins: Place the prepared muffin halves in the oven and toast until they are barely golden, about 4 minutes, to prevent sogginess when adding toppings.
  3. Add Sauce and Seasoning: Remove toasted muffins from the oven and spoon 1 ½ tablespoons of pizza sauce over each, spreading evenly with the back of a spoon. Sprinkle each with a tiny pinch of kosher salt and ground black pepper.
  4. Add Cheese and Toppings: Sprinkle shredded mozzarella cheese and Italian seasoning over the sauce. Add your choice of toppings such as pepperoni or sautéed vegetables.
  5. Bake the Pizzas: Return the pizzas to the oven and bake for 10 minutes until the cheese is melted and muffin edges are browned.
