Ingredients

2 medium eggplants, sliced lengthwise

1 cup ricotta cheese

1 cup spinach, chopped

½ cup grated Parmesan cheese

1 egg

1 cup marinara sauce

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplants lengthwise and brush with olive oil. Bake for 10 minutes until slightly tender.
  3. In a bowl, combine ricotta, spinach, Parmesan, egg, salt, and pepper.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Place a spoonful of the ricotta mixture on each eggplant slice and roll it up.
  6. Arrange rolls seam-side down in the dish. Top with remaining marinara and extra Parmesan if desired.
  7. Bake for 25 minutes until bubbly and golden.
  8. Let cool slightly before serving.
