Ingredients

For Egg Mixture

  • 2 large eggs
  • 3 tablespoons onion (or shallots or green onions, finely chopped)

  • 1 green chili (chopped, optional, deseeded for low heat)
  • 1½ tablespoons coriander leaves (or 1 tablespoon parsley, chopped)
  • 1 pinch turmeric (optional)
  • 1 pinch chili flakes or black pepper (adjust to taste)
  • ¼ teaspoon salt (adjust to taste)

For Toasting

  • 2 to 4 slices bread (preferably thick slices, depending on size)
  • 1 tablespoon oil or unsalted butter

Instructions

  1. Preparation: Break the eggs into a mixing bowl and whisk them well with a fork until smooth and frothy.
  2. Add Vegetables and Spices: Mix in the finely chopped onions, green chilies, tomatoes, and coriander leaves. Sprinkle in turmeric, salt, and chili flakes over the mixture and whisk again until well combined and frothy.
  3. Heat the Pan: Place a pan over medium heat and add the oil or butter. Spread it evenly to coat the surface well.
  4. Dip Bread Slices: Dip each slice of bread into the egg mixture, coating both sides thoroughly. Avoid soaking too long to prevent sogginess.
  5. Cook Toast in Pan: Place the coated bread slices on the hot pan (2 to 3 slices at a time depending on pan size). Pour about 2 tablespoons of the egg mixture over each slice. Cook until the base is firm and golden.
  6. Flip and Press: Turn the toast over to cook the other side, pressing gently with a spatula to help the egg adhere and cook evenly. If you have leftover egg mixture, pour it over the cooked toast and cook further for extra flavor.
  7. Serve: Remove the egg toast from the pan and serve hot or warm.
  8. Oven Option: Preheat the oven to 380°F (160°C) for at least 15 minutes. Butter one side of each bread slice and place them on a baking tray buttered side up.
