Ingredients

Mango Puree

  • 12 oz fresh, fully ripe and tender mangoes (peeled, pitted, and sliced)

Gelatin Mixture

  • 2 tbsp cold water
  • 1.5 tbsp gelatin powder

Other Ingredients

  • 0.54 cups full-fat coconut milk (or evaporated milk/heavy cream/evaporated coconut milk as substitute)
  • 1.5 tbsp white granulated sugar
  • 4 tbsp evaporated milk (or coconut milk for dairy-free serving)

Instructions

  1. Prepare Mango Puree: Peel, pit, and slice the ripe mangoes into small pieces. Transfer the mango pieces to a blender or food processor and blend for at least 1 minute until very smooth to break up the mango fibers. For extra smooth pudding, optionally press the puree through a fine sieve.
  2. Bloom Gelatin: In a large bowl, add the cold water and sprinkle the gelatin powder over it. Mix gently for 30-45 seconds until the gelatin thickens into a gel-like substance and slightly swells. This is a normal step to prepare gelatin.
  3. Combine Ingredients: To the gelatin mixture, add the white sugar, coconut milk, and the mango puree. Stir well until the mixture is smooth and all ingredients are well combined.
  4. Dissolve Gelatin Mixture: Transfer the mango mixture to a small pot and heat it over medium-low heat. Whisk continuously for about 3-4 minutes until the gelatin is fully dissolved and the mixture is smooth and creamy. Carefully avoid bringing the mixture to a simmer or boil to preserve texture.
  5. Set the Pudding: Pour the pudding mixture evenly into four greased serving bowls or silicone molds. Gently poke out any air bubbles on the surface and smooth the top with a spatula. Optionally cover the bowls with plastic wrap to prevent skin formation.
  6. Chill and Serve: Refrigerate the pudding for at least 6 hours or overnight until fully set. Serve chilled, topped with evaporated milk or coconut milk as desired.

Notes

  • Use only fresh, fully ripe mangoes for the best flavor and texture. Avoid unripe or canned mangoes.
  • Do not boil the pudding mixture as boiling can ruin the gelatin’s setting ability.
  • For a dairy-free version, substitute all dairy milk with coconut milk.
  • Ensure gelatin is completely dissolved before pouring mixture into molds for smooth texture.
  • Refrigerate long enough to achieve firm pudding, at least 6 hours or overnight.
