Ingredients

Shrimp and Broth

  • 2 whole lemons
  • 1 ½ tbsp pickling spice
  • 1 to 1 ½ pounds extra colossal deveined unpeeled shrimp

  1. Prepare the lemon broth: Slice the lemons in half and squeeze the juice into a medium-sized pot filled with water. Add the squeezed lemon halves to the pot as well to infuse more citrus flavor.
  2. Add spices and salt: Add 1 ½ tablespoons of pickling spice and an appropriate amount of salt to the pot, then bring the mixture to a rolling boil over medium-high heat.
  3. Cook the shrimp: Place the extra colossal deveined unpeeled shrimp into the boiling lemon spice water. Let them cook for 4 to 5 minutes until they turn firm and opaque, indicating they are fully cooked.
  4. Chill the shrimp: Immediately transfer the cooked shrimp to an ice bath to stop the cooking process and cool them quickly for optimal texture.
  5. Peel and serve: Once chilled, drain the shrimp and peel off the shells, leaving the tails on for an attractive presentation. Serve the shrimp with cocktail sauce or cover and refrigerate until ready to use.
