Ingredients

Pink Coconut Base

  • 1/2 tsp Vanilla extract (Adds warmth and sweetness)

Latte and Garnishes

  • 1 cup Cold brew coffee (Or 2 shots of espresso, fully cooled)
  • Ice cubes (Plenty of ice cubes!)
  • Optional Coconut whipped cream (For a truly special finish)

Instructions

  1. Make the Pink Coconut Base: In a small jar or bowl, whisk together the full-fat coconut milk, beet juice (or pitaya powder), maple syrup, and vanilla extract until the mixture is uniformly creamy pink in color. Shaking the jar vigorously can speed this process.
  2. Prepare the Glass: Select a tall, clear glass to showcase the beautiful layering. Fill it about three-quarters full with plenty of ice cubes.
  3. Layer the Pink Coconut Mixture: Slowly pour the prepared pink coconut mixture over the ice, filling the glass about halfway. Allow it a moment to settle and create a smooth layer.
  4. Layer the Cold Brew Coffee: Using the back of a spoon held just above the pink layer, carefully pour the cold brew coffee slowly, allowing it to float atop the pink mixture without mixing immediately. This technique helps achieve the signature layered effect.
