Ingredients

Cooking spray

2 large onions, sliced

1 (1.5-ounce) package dry French onion soup mix

1 1/3 cups diced cooked bacon (optional)

6 large potatoes, peeled and sliced

3 1/2 cups shredded Cheddar cheese

2 1/2 cups heavy cream (or light cream if preferred)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly coat a 9×13-inch baking dish with cooking spray.
  2. Arrange sliced onions in the bottom of the dish, sprinkle with soup mix, add bacon (if using), a layer of potatoes, a layer of cheese, and drizzle with some cream.
  3. Repeat the layers until all ingredients are used, finishing with a generous cheese layer on top.
  4. Lightly coat a piece of aluminum foil with cooking spray and cover the dish, coated-side down.
  5. Bake for 40–50 minutes, until potatoes and onions are tender.
  6. Remove the foil and bake for an additional 10 minutes, until the top is golden brown and bubbly.
  7. Let cool slightly before serving.
