  • 1 green onion (finely chopped)
  • 2.5 tbsp regular soy sauce (or light soy sauce; avoid dark soy sauce)
  • 1/2 tbsp sesame oil
  • 4 large eggs (beaten)
  • 2 tbsp vegetable oil (or any neutral oil)

Instructions

  1. Heat the oil: Heat vegetable oil in a large pan or wok. If using a wok, allow the oil to become slightly smoky to enhance flavor. If using a normal pan, heating until hot without smoking is sufficient.
  2. Cook the eggs: Pour in the beaten eggs and quickly stir-fry them, allowing them to take shape but remain moist. This initial cooking ensures fluffy eggs mixed evenly in the dish.
  3. Add the rice: Toss in the cold cooked rice. If any rice clumps are present, break them apart gently inside the pan to ensure even cooking and texture.
  4. Incorporate green onions: Push the rice and eggs to one side of the pan. Add the remaining oil to the empty side along with the chopped green onions. Mix the green onions into the rice and eggs thoroughly to distribute flavor.
  5. Season and finish: Pour soy sauce and sesame oil around the edges of the pan. Toss everything together until the rice grains turn a uniform light brown color. Remove from heat and serve immediately for best taste and texture.
