Ingredients

6 ½ (1-ounce) squares semisweet chocolate, finely chopped

½ cup butter, cut into 8 pieces

3 large eggs, room temperature

⅓ cup white sugar

2 tablespoons all-purpose flour

4 teaspoons unsweetened cocoa powder

1 pinch salt

Instructions

  1. Preheat oven to 400°F (200°C). Grease and flour four 6-ounce ramekins.
  2. In a double boiler over simmering water, melt chocolate and butter, stirring frequently until smooth. Remove from heat.
  3. In a large bowl, beat eggs and sugar with an electric mixer until pale and thick, about 5 minutes.
  4. Fold in melted chocolate, then add flour, cocoa powder, and salt. Mix until just combined.
  5. Divide batter evenly among prepared ramekins. Place ramekins on a baking tray.
  6. Bake for 10–13 minutes, until edges are set but center is still jiggly.
  7. Let cool for 5 minutes. Carefully invert onto plates and serve warm, optionally topped with powdered sugar, berries, or vanilla ice cream.
