Ingredients

4 tbsp unsalted butter

1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup all-purpose flour

3 cups low-sodium chicken or vegetable broth

2 cups half-and-half (or whole milk)

4 cups broccoli florets, chopped small

1 large carrot, shredded

2 cups sharp cheddar cheese, shredded

1/2 tsp mustard powder (optional, for depth)

Salt and black pepper, to taste

Pinch of paprika (optional)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and cook until softened, about 3–4 minutes. Stir in the garlic and cook for 1 minute.
  2. Whisk in the flour and cook for 1–2 minutes, forming a light roux.
  3. Gradually whisk in the broth until smooth, then add the half-and-half. Stir and bring to a gentle simmer.
  4. Add the broccoli and shredded carrot. Cover and simmer until the broccoli is tender, about 10–12 minutes.
  5. Reduce heat to low. Stir in the shredded cheddar cheese gradually until melted and smooth. Do not boil once cheese is added.
  6. Season with salt, pepper, mustard powder, and paprika to taste.
  7. Ladle into bowls and serve warm, ideally with crusty bread or in a bread bowl.

  • For a smoother texture, use an immersion blender to puree part or all of the soup before adding cheese.
