Ingredients

2 pounds russet potatoes

3 tablespoons olive oil

1 teaspoon kosher salt

¼ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon paprika

½ teaspoon onion powder

1 tablespoon fresh minced parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with a silicone mat or nonstick foil.
  2. Peel and dice the potatoes into ½-inch cubes. Pat the cubes dry with paper towels or let them sit for 15-20 minutes.
  3. Place the diced potatoes in a large bowl. Drizzle with olive oil and toss to coat. Add kosher salt, black pepper, garlic powder, paprika, and onion powder. Toss again to coat evenly.
  4. Spread the seasoned potatoes in a single layer on the prepared baking sheet. Bake for 20-23 minutes, or until tender.
