Instructions

  1. Soften Boursin: Let the Boursin cheese sit at room temperature for 15-20 minutes to slightly soften, making it easier to spread later.
  2. Prepare Bruschetta Mixture: In a small mixing bowl, combine the chopped, de-seeded tomatoes, chopped fresh basil, extra virgin olive oil, balsamic vinegar, pressed garlic, salt, and pepper. Stir well to combine. Let this mixture rest for 5 minutes so the salt can draw out the tomato juices, enhancing the flavor and juiciness.
  3. Spread Boursin: Transfer the softened Boursin cheese to an 8-9 inch shallow serving dish or pie pan. Using the back of a spoon, spread the cheese evenly to form a smooth base layer.
  4. Add Bruschetta Topping: Spoon the tomato basil bruschetta mixture evenly over the top of the Boursin layer, being careful to leave the juices behind in the mixing bowl (these can be saved and drizzled over salad greens or sliced cucumbers as a flavorful dressing).
