Ingredients

Fruit

  • 1 dragon fruit (cut into 2 inch cubes)

Liquids

  • 2 oz simple syrup (lemongrass infused)
  • 2 oz lime juice (fresh squeezed)
  • 4 oz rum (white)

Additional Flavor

  • 1 tsp ginger (fresh minced or micro-planed, optional)

Instructions

  1. Prepare the Dragonfruit: Slice the dragonfruit in half lengthwise. Carefully peel the sides of the dragonfruit away from the inner flesh.
  2. Cube the Fruit: Cut the peeled dragonfruit into about a dozen pieces, roughly 2-inch cubes, to facilitate blending.
  3. Combine Ingredients in Blender: Place the cubed dragonfruit into a blender. Add the lemongrass-infused simple syrup, freshly squeezed lime juice, white rum, and fresh minced ginger (if using).
  4. Blend Gently: Pulse the blender on low speed just until the fruit is lightly puréed. Be careful not to over-blend to avoid pulverizing the black seeds, which can cause the pulp to turn gray and affect texture.
  5. Serve: Pour the cocktail mixture over ice into a cocktail glass. Enjoy immediately for the best refreshing flavor.

Notes

  • When blending, pulse lightly to avoid turning the drink gray and to retain a pleasant texture.
  • Fresh ginger is optional but adds a subtle spicy complexity.
  • Lemongrass-infused simple syrup can be prepared by simmering sugar, water, and fresh lemongrass stalks until fragrant, then cooling before use.
  • Use fresh lime juice for the best vibrant flavor.
  • Adjust the amount of rum according to your alcohol preference.
