Ingredients

Meat and Seasoning

  • 1 pound lean ground beef (or ground turkey)
  • 2 tablespoons taco seasoning
  • ¼ cup salsa

Salad Base

  • 4 cups chopped romaine lettuce
  • 1 cup corn (canned or steamed from fresh/frozen)
  • 1 cup diced onion (any color)
  • 1 cup diced tomatoes
  • ¼ cup sliced green onion

Crunch and Extras

  • 2 cups Doritos
  • 1 small avocado (diced before serving)
  • Grated cheddar cheese (optional, to taste)
  • ¼-½ cup sour cream (for topping)
  • Black beans or pinto beans (optional)
  • Salsa or taco sauce (optional)
  • Guacamole (optional)
  • Jalapeños (optional)
  • Bell pepper (optional)
  • Black olives (optional)
  • Cilantro (optional)

Instructions

  1. Brown the Meat: In a skillet over medium-high heat, brown the ground beef until fully cooked, stirring occasionally. Drain any excess fat if necessary to keep it lean.
  2. Add Seasoning and Simmer: Stir in the taco seasoning, ¼ cup salsa, and ¼ cup water. Reduce heat to low and simmer uncovered, allowing the mixture to thicken into a saucy consistency.
  3. Prepare the Vegetables: Finely chop the romaine lettuce, onion, tomatoes, and slice the green onions thinly. Combine all the chopped vegetables in a large mixing bowl.
  4. Add Corn and Crunch: Add the corn and crushed or whole Doritos to the vegetable mixture. Include any optional extras such as black beans, jalapeños, bell peppers, olives, or cilantro based on your preference. Mix gently to combine everything evenly.
  5. Assemble the Salad: Divide the salad mixture into serving bowls. Top each bowl with the cooked taco meat, grated cheddar cheese if desired, diced avocado, and a dollop of sour cream. Add additional salsa or taco sauce for extra moisture and flavor.
  6. Serve and Enjoy: Serve immediately to enjoy the crisp texture of the Doritos and freshness of the salad combined with the warm, flavorful taco meat.

Notes

  • You can substitute ground turkey for a leaner option.
  • Adjust the amount of taco seasoning to your taste preference.
  • Doritos can be crushed for more even distribution or added whole for crunch.
  • Feel free to add other toppings such as jalapeños, black olives, or cilantro for extra flavor.
  • This salad is best served immediately to prevent the Doritos from becoming soggy.
