Ingredients

3 tablespoons cornstarch

2 tablespoons water

1 1/2 cups soy milk

1/4 cup white sugar

1/4 cup unsweetened cocoa powder

1/4 teaspoon vanilla extract

Instructions

  1. In a small bowl, mix cornstarch and water until a smooth paste forms.
  2. In a large saucepan, combine soy milk, sugar, cocoa powder, and vanilla extract. Stir in the cornstarch paste and mix until well combined.
  3. Cook over medium heat, stirring constantly, until the mixture begins to boil.
  4. Continue to cook and stir for an additional 3 to 5 minutes, until the pudding thickens.
  5. Remove from heat and let cool for 5 minutes. The pudding will continue to thicken as it cools.
  6. Transfer to serving bowls, cover, and refrigerate for 1 to 2 hours until fully chilled. Serve and enjoy.
