Ingredients

½ cup old-fashioned oats (large flake)

1 cup water

¼ tsp salt

2 tbsp cold milk

12 large eggs (whisked)

1 cup frozen mixed berries

¼ tsp vanilla extract

1 tbsp honey or maple syrup

Instructions

  1. In a small saucepan, combine frozen mixed berries, vanilla extract, and honey (or maple syrup). Cook over medium-low heat for 5–7 minutes until the berries break down and become jammy. Mash the berries with a potato masher or fork to speed up the process. Set aside.
  2. In a medium saucepan, combine oats, water, and salt. Bring to a boil over high heat, then reduce to medium-low. Simmer for 5-8 minutes, stirring occasionally to break down the oats. Once absorbed and tender, remove from heat.
  3. Whisk the eggs in a separate bowl, then add cold milk to the oats and stir for 60 seconds. Slowly stream the eggs into the oats while whisking continuously. Turn heat back on to medium-low and cook for 60-90 seconds until the oats thicken and become creamy, stirring continuously.
  4. Spoon the custard oats into a bowl and top with the warm mixed berry compote. Optionally, add a dollop of Greek yogurt or a sprinkle of granola for extra flavor and texture.

Notes

  • Adjust sweetness in the compote by adding more honey or maple syrup if desired.
  • Add a pinch of cinnamon or nutmeg to the oats for extra flavor.
  • For a different fruit, use fresh blueberries, raspberries, or blackberries in the compote.
