Ingredients

2 large cucumbers, thinly sliced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 orange bell pepper, thinly sliced

¼ cup red onion, thinly sliced

¼ cup fresh dill, chopped

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon lemon juice

1 teaspoon honey

Salt and pepper to taste

Instructions

  1. Combine Vegetables: In a large bowl, combine the sliced cucumbers, red, yellow, and orange bell peppers, and red onion.
  2. Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, lemon juice, and honey until well combined.
  3. Dress the Salad: Pour the dressing over the cucumber and pepper mixture. Add the chopped fresh dill and toss everything together until the vegetables are well coated with the dressing.
  4. Season: Season with salt and pepper to taste.
  5. Chill and Serve: Refrigerate the salad for at least 15 minutes before serving to allow the flavors to meld together. Serve chilled as a refreshing side dish or a light main course.

Notes

  • Add crunch with chopped nuts or seeds like sunflower seeds or almonds.
  • If fresh dill isn’t available, try parsley, basil, or mint.
  • Adjust the sweetness by adding more honey to the dressing if desired.
  • For meal prep, store the salad components separately and combine before serving to keep the veggies crisp.
